Citric acid is an important organic acid, colorless crystals, often containing one molecule of water of crystallization, odorless, has a strong acidity, soluble in water. Control the crystallization temperature obtaines anhydrous citric acid. Used in industry, food industry, cosmetic industry.  

 At room temperature, citric acid anhydrous is a colorless translucent crystals or white granules or white crystalline powder, odorless, very sour taste, slight deliquescence in moist air. It can exist in the form of the anhydrate or monohydrate.
When heated to 175 ° C,it will decompose to produce carbon dioxide and water, the remaining white crystals. Citric acid is a strong organic acid, 3 H ionization; heating can be decomposed into a variety of products.

 
1) In Food Industry: About 50% used in beverages & 20% in other food applications.

- An acidity regulator.
