                Dehydroacetic acid is a new type of chemical preservative, an important organic synthesis intermediate, and an excellent plasticizer. Since its antibacterial properties were discovered in 1940, it and some of its derivatives have been used as preservatives in many countries. In 1949, the United States approved it as a food preservative, and Japan began to use it in the 1970s. At present, dehydroacetic acid and some of its derivatives have been used in the anti-mildew and anti-corrosion of industrial products such as food, textile, paper, rubber, plastic, archives and arts and crafts, and have received good results.

                Dehydroacetic acid is colorless to white needle-like or plate-like crystal or white crystalline powder, molecular formula is C8H8O4, molecular weight is 168.15, odorless, slightly soluble in ethanol and cold water, and its aqueous solution is weakly acidic. The melting point is 108-111 °C (sublimation), and the boiling point is 269.9 °C. It is easily soluble in the aqueous solution of fixed alkali, but insoluble in water. 1g is dissolved in about 35mL of ethanol and 5mL of acetone. Its saturated aqueous solution of dehydroacetic acid has a pH equal to 4.
